We never stayed at a hostel that required a sleep sheet. However, some hostels only provide one sheet, a pillow case and a blanket. Since only the sheets and pillow cases ever get washed, we decided in those rare occasions that our sleep sheets were warranted.

i've never needed my sleep sheet in terms of sheets not provided, but i have needed it in times when i found hair on my pillow, non-clean looking sheets etc...
that being said i used it every day of my trip just because i found it so comfy!!!

I'm planning on making a sleep sheet, but is there really a need to sew it up, or can I just take a sheet and wrap myself up in it at night? I would rather do that so I can poke my feet out of the bottom if they get hot, but are there reasons it must be sewn up like a sleeping bag? The only possible reason I can think of right now is to be a little less bed bug prone.

No real reason other than maybe it's a little easier to work with. Do whatever works best for you.
